I need some ideas, I wont be skiing or smoking the POT, so what is there to do, places to eat, places to see of course all within distance of the city, I don't mind driving 50-75 miles one way, so let me get some ideas.

I don't really know Denver, but there are some cool things to see in Colorado Springs (about an hour south).
Garden of the Gods, Pikes Peak, Norad are a couple that come to mind.
A bunch of other stuff to do, and some cool brew pubs and such down-town.

Drive by the stadium and pick up some new Bronco gear!
Eat some steak at John Elway's steak house.
Go to Colorado Springs and see the Air Force Academy
Cruise Colfax at night for hookers
Eat some Rocky Mtn oysters.

Perhaps my favorite day trip is heading to Mt. Evans (road is higher than Pikes Peak) and is free if you just roll up, $10 if you want to get out. Pay the fee so you don't have to argue with the Park Ranger about a bullshit ticket...........................
Anyway, the views and wildlife are insane, mountain goats, bears, bighorns, elk, mule deer, marmots, occasional eagle, moose at the right time, etc. Then on the way back down, stop in Idaho Springs, hit Tommyknockers Brewery, buy a gallon of the Maple Nut Brown Ale, then hit Beaujo's pizza (right down the street) and go crazy. In the summer, you can see the water fall driving the wooden wheel across the highway. If your chick wants to do shopping, she can. The town is Old Colorado, so take it in.
Otherwise, you can head up to the mountains. Don't get too caught up in the trendy/touristy shit. The best way to see Colorado is to lose yourself in it. Find a local, ask them what they enjoy and pursue that.
Also, Rocky Mountain National Park is incredible, especially if you don't mind one legged hiking , and Estes Park is a damn nice place to spend a day.
