I actually stayed in a Condo. VRBO.com has some awesome deals. We stayed up in Kaanapali for about $100 a night back in 2009.
The condo was a 1br/1ba and had a very spacious kitchen. We went down to the local store and for about $88 we had enough food for the week. We made our own lunches and ate them on a break during the Mt. Haleakala bike trip, I cooked breakfast every morning and there were free grills in the condo complex so we cooked steak/hotdogs/etc..
Very cost effective but the view was incredible (water front condo, balcony was right at the water) we watched the sunsets every night (it faced west)
We don't like big box hotels and 40 story towers very much, so if you want to go this route, I can probably find where we stayed. The owner is awesome and took care of us from San Fran where he lives.

If you're not wanting the full service hotel, vacation rental is the way to go.

"Hawaii's most Hawaiian hotel"
The hospitality there was amazing, the place was gorgeous and it has one of the better beaches that isn't littered with rocks/debris in the sand.
It was amazing to say the least and I would definitely want to go back. I just hated the flight. lol.
You'll love it along with the woman there.
Definitely do the snorkling for sure and other tours they offer. I liked the "road to hanna" while it is long, our guide was very knowlegable and the island is beautiful.

Vacation Rental By Owner...
Hotels can't compare in my opinion... and the rates in many cases are comparable to the hotels...

Away from the idiotic crowds and the beach is pristine...
