I left the brisket in and already planned to go to 205 per Matt's suggestion

The 3 is done of the 3-2-1 method on the spare ribs so I just wrapped them and put them back in the oven -- ugh-- smoker!

Step 2 is done and brisket hit 205 at the same time I needed to pull the ribs and unwrap them at 4:10 So the brisket is wrapped and in the cooler and the ribs are on their last hour of cooking
Potato salad and sweet tea are being made now
