I would go with the 331 if you want it to fit under a stock hood.
If you'll consider adding some type of scoop onto your hood, like one off a early 80's GT, then I would go with the 351.
For the money spent I would build some type of 351. Stronger block and you already got a t56 which will take a little more abuse than a t5
It all comes down to hood space. Unless you stay with a stock stroke 302.
331/347 or 351
Only additional cost to go to 351 versus all the stuff for a 302 stroker would be for a swap pan and pu and some motor mounts. Because you will have to upgrade heads, rotating assembly, intake, balancer, flywheel etc for a larger motor anyway.
