you know, there are 2 different waterpump rotations, one for vbelt and one for serpentine. I would try changing that pump for the forsure correct one.
Don't worry about what you can't change.
Do the best you can with what you have.
Be honest, even if it hurts.

I may have missed it but have you tried to get consistency of WHEN it over heats?

I.E. At low speeds/idle, high speeds, or at all times. Most of the time when I ask this I get "all the time", then I get ahold of the car and find out that isn't true.

Cold radiator means now water flow, plain and simple, so that is water pump, t'stat, clogged radiator, head gasket issue impeding flow.

I have even seen blown head gaskets cause a cold radiator because air is being blown into the coolant and not allowing a full amount of coolant to flow.

If you can start it and let it sit for a long time and it be fine that means you have some water flow, the t'stat and that the fan is working.

So start there, then take it out and drive slow for a while, if it stays fine then romp on it good. If it gets hot right after the romp you can pretty much put your money on the headgaskets.

One last bit of info, taking a t'stat out can cause overheating so be cautious with that, and I have seen bad radiator caps cause all kinds of issues. I had a brand new, right out of the box radiator cap cause over heating, blown up radiators, and blown hoses. Found the 10 year old factory original in the trash can, put it back on and never had that problem again.

What you can do to help us here is.

part number off the water pump, pictures of the belt routing.

This should not be this complicated.
belt routing will not change rotation unless the grooved side of the belt is on the wp pulley. water pump is for sure a possibility

I am gonna go with head gasket on backwards and blocking the coolant passages.
Fuck you. We're going to Costco.
