If you are going to pull the motor, just get any mustang. A GT500 is comfortable at 700 rwhp with bolt-ons (no real reason to pull the motor).

To the OP, if you are filthy rich, then get the GT500. You want 700+hp a KB with the supporting mods will be just a tad over 10k on top of the price of the car. My friend has one as a daily driver and gas is a killer, her's is stock, I can't imagine one with a KB as a daily.
