Boss 302 hands down. It's built for road race plus the engine is built better then the normal GT for boost. It has forged internals and the GT doesn't.

10-15k for cnc heads, a body kit and decals? No thanks.
Get a regular GT, swap over to a TR6060 trans and McLeod clutch, install a forged roatating assembly, big Kenne Bell kit and make 750 to the tires on a super super conservative E85 fuel tune. You won't even need to do head work or custom cams.
