Going Carbed

Before going carbed, you might consider just moving to a better EFI system than stock Ford stuff, which is better suited to Racing, which is more accessible with more tuning options.
Something along the line of the Edelbrock Pro-Flo2 system. http://www.jegs.com/i/Edelbrock/350/35420/10002/-1 There are others, just an example.
If you go carbed, and don't have experience with them, expect to see your car slow down at first until you get it straight. Once you get everything you need, like a wide-band O2 sensor to Tune your A/F ratio, a good carb, and all the tuneable options and parts, fuel pump, fuel lines, fuel pressure reg, etc... you're going to be heavily invested and always smelling like fuel on racedays.

Going carbed is going backwards. Why not sit down, and take the time to learn how to tune it yourself. Buy a Quarterhorse and a copy of Binary editor. There are several free GUFB strategies out there that are complete and free of charge from eecanalyzer.

Ive had both.
On a proper carb setup (I used Holleys back in the day), you have to properly match the power valve to your motor. Put in the correct jets, adjust your idle mixtures, adjust the timing for your secondaries via cam or vaccum diaphram springs. If you had a metering plat for the secondaries, you'd swap them out for a metering block, etc. How the carb is mounted to the intake also played a factor. If you wanted to change anything you were leaning over the engine. Plus you go back to a old style type of ignition that you had to sync to the car.
With a GOOD efi system you should make more power and you can adjust everything on the fly with a laptop from your drivers seat. Datalogging, different tune files etc. you'll pay a bit more for the system but its better in the long run
