Adjustable cables are junk. Not saying that's your problem but they are known for failing. Run a stock Ford cable with aluminum quadrant and firewall adjuster. I've never experienced clutch fork problems but adjustable cable problems are common.

And I had a extra adjustable so I threw it on there..
It only acts up when it's cold. If that matters

Check the entire cable for wear! I had a similar problem in my '94 GT and the cable housing was worn. The cable housing would flex and bend at the worn point, and not support the cable properly. This was the cause of many headaches. A new stock cable fixed this in a hurry.
When the quadrants break, you get the ratcheting sound of death for the stock plastic ones. I know all about this too.
While you are replacing the cable add a firewall adjuster too. It's easy and a very nice item to have.
