I'm looking to build a track car that I can drive to the track and have some fun on the street every so often.

Cheap, fast, reliable - pick two.

What you are wanting to build those cars are serious money pits. Most people who aren't made of money tend not to stay in that insane horsepower game very long due to the crazy costs. There are a few high horsepower budget builds around here like you are talking about, but when they break they are down for months, in some cases years at a time due to the extreme costs.

To much to list...if you know your roush products, think of it as a trak-pak fucked a p-51 but with more power.

Sounds like the Roush is a nice car already. Keep it for a street car and get rid of something else. Find a clapped out fox or whatever and go to town on it.
