I'd do it in a heartbeat. Like you said, You could convert it back. Just keep your old motor on ice.
You can cut the towers out and a K member similar to a fox one is available to bolt in to your car and convert it to a McPherson style suspension. Saw it done on a '63 fairlane recently. Richard Painter's, daughter's ride.
