im not the most technically savyy person in the world. but will a car not having a thermorstat cause it to slowly get hot.

When your coolant reaches a certain temp the t-stat opens up anyway allowing the coolant to flow. Not having a t-stat will cause the coolant to take longer to warm up but will allow the engine to run cooler at operating temperature.
Heat is removed more efficiently by any heat exchanger when the hot fluid mass flow rate is increased. No t-stat = greater mass flow rate.
