a cash game is just that, a cash game. each chip is worth it's face value in real money. you buy a chip stack and cash out whenever you want. what you turn in as far as chips is what you receive as far as cash...
a "sit and go" is a tournament. you buy in for a certain amount and get a chip stack. however, your chip stack will not match the amount you bought in for, i.e. a $100 buy-in tournament usually gets you a stack of $1500 tournament chips. you cannot cash out for the amount of your stack. the players are playing for all the chips and a prize pool is set for the top finishers...
as has been said, i have never seen a single table sit and go at a brick and mortar casino. when they have tournaments there are usually quite a few entries and at least 5 tables in play...
hope this helps with any confusion on the difference between a cash game and a sit and go...
