      I don't know about race cars, but my coupe is insured with American Collectors Insurance. You set the insured value and pay a yearly rate. I have two cars (the '92 AT $9K and my '65 AT $33K - total yearly premium is $409) insured with them and they never asked for an appraisal or anything, just pictures of the cars. I'm sure they would question you if the declared value is $50k or something crazy.
