Houston kinda sucks, but if you really have to go... having lived down there for a bit, if it were me I would:
Get a room at the Hyatt Centric The Woodlands
Saturday morning tell her she's not allowed to leave Market Place (there's enough shopping shit there to keep her busy)
You go to Spring Guns & Ammo... shoot full auto stuff for a while.
Take her to lunch at Local Pour at Hughes Landing
Leave her at Market Street again to shop
You to go Hop Scholar Ale House and drink good beer for a while... maybe read a newspaper. Who knows. Enjoy the silence.
Pick her up later for dinner at Jasper's
Go back to your room.
Houston, south of Spring / The Woodlands is shit.

Hit up El Tiempo for the old school Carnitas. Killen's BBQ in Pearland is a top 5 Texas BBQ joint. If they have them, get the Akaushi burnt ends. With that said, you won't be disappointed with anything you order.
