Another vote to rent. No need to get buyers remorse in a yr. Likely you can find something to rent thats nicer than the equivalent mortgage if you purchase.
Denver and Seattle markets are crazy... Best of luck. A top realtor is going to be key with homes selling in hours of hitting MLS. Need to find one who is established and has some good pocket listings.
From what I can tell, the only thing Colorado could brag about when it comes to food is their pizza. Lots of good pizza joints, including the best I've ever had (Secret Stash in Crested Butte). The only decent bbq I've had is from a Kerrville, TX couple that runs a place up here during the summer, and it's not "holy crap" good or anything. The steaks I've had are just okay. If there is decent Mexican or Tex-Mex around, I haven't found it yet.
That said, I haven't been all over the state. But folks in CO, in general, don't brag about the food like we do in Texas, and it seems to be for good reason.
I forgot. My friend up here is from South Louisiana and has the hookup on cajun meats. Seriously good andouille and tasso. Come to church with us and I'll introduce you.
Renting seems attractive if you're used to Dallas rental prices. Unfortunately it's easy to spend $3k+ a month renting a regular house here.
I've been able to find 2-3bd apartments for $1500-1800. It just depends on the sq footage. I was checking into building a house in the Candalas neighborhood in Arvada. It'll take a year to get it built.

The Minturn saloon has pretty respectable Tex Mex if you are ever up near Vail.
