I gave it some more thought.
Anaheim has one really great thing going for it, it's off the 91. That means you can stay in Redondo / Manhattan / Hermosa to be at the good LA beaches and then haul ass pretty effortlessly east for your conference. In my experience, the 91 is the only highway that is consistently traffic-free.
Another option would be to stay in Orange County, probably Huntington Beach or Newport. The trip up 39 / Beach Blvd is not too bad. Kind of like cruising Belt Line Rd, heh. For some reason, HB does not appear at this zoom level, but it is where 39 and 1 converge. It's pretty cool and there's almost always some kick ass surfing to watch.
The last time we went to LA, we did an AirBnB one block off the beach in Redondo. The location was awesome but you never know what you're going to get with those rentals. In this case, it was a room in an occupied house. They had rented out their 17yr old son's room to a couple of Dutch bicyclists that had ridden from Montreal to LA. The son had to sleep on the couch! It was kinda weird! But sort of fun, in a bohemian way.
I highlighted the beach areas that I would consider staying, and the route to Anaheim from the LA and Orange beaches. You should take an afternoon and cruise through Palos Verdes / Rancho Palos Verdes. Yeah man, I happen to have done all that, those beaches were always my favorite for sure...

LAX to Anaheim stadium is about 90 minutes with some traffic. I would highly recommend staying in Orange County on the coast. I go there for work about 2 times a month, and I would say you should stay in Newport Beach if you are on a budget or in Laguna if you are spending choo choo.
The Inn at Laguna Beach is pretty nice.

I've typically stayed in the central LA/LAX area when I've been there. I'm going to agree with everyone else on staying closer to Anaheim.
As for SF, if you don't go with Craigs idea (which sounds awesome), or snag something downtown, there's a Holiday Inn in South San Francisco with a Houlihan's in the lobby. Secure parking, and right on 101. You're 10-15 minutes from downtown with traffic.
As I recommended to Lea for their trip, go to Muir Woods. Also, take time to visit the WWII lookout positions along the coast on the way back to the Golden Gate, and stop at the fort before you cross.

As I mentioned, we went in Jan and there was even a fair amount of beach activity then. Not swimming, but just people hanging out.
