    Rinse, pat down, and trim.

    Why? Sure, they were "cleaned" at the packing house, but they've since been transported across the country and sat. I'm not a blithering idiot, and know how to do so without cross contaminating or spreading bacteria.

                        Yes on pork, no on beef. Far less bacteria with beef, and unnecessary imo. I'll also add to that - All the chicken and pork I buy goes in the freezer. With beef, only brisket, roast and ground beef goes in the freezer. I'll cook steaks the day I pick them up, and don't see a need to wash them since they are cut up in store.
