I'm now much more frugal so looking at used on Dorba and Craigslist as I can't justify spending that kind of coin at this time in my life.
The trickle down tech is just insane in a matter of a few years, much less almost 20 years. My uncle has a 2003/4 Cannondale Jekyll team volvo, the badass of badassedness when he bought it. We swapped bikes last time out at the trail and he actually preferred the feel of my "entry level" bike.

I cant support the blanket recommendation of 29-er's for everybody. Im personally not a fan, and ive ridden some $10k+ 29-er's. Also, I really think in the last few years you are mostly paying for a name with Specialized. Not that they dont make a quality bike, but especially for an entry level bike, you can get more for your money with other brands.

Mountain Bikes are great (still have my Gary Fisher Paragon) but you might go look for something a little more Hybrid for what it sounds like you want to do. I bought a Marin Muirwoods 29er a couple of years back and I just love it (mountain bike gears, but taller skinner off road tires and disk brakes) I do the neighborhood rids, plus the Trinity trail, and the Rails to Trail from Weatherford to Mineral wells just fine. This bike replaced my high end road bike and I'm having a lot more fun with it.

Here's a link to a new one. I imagine Trek and everyone else make something similar. I just got a great deal on mine from a store going out of business. I do really like the flat black paint on it though.

Performance Bicycles has all bikes at 50% right now.
Performance Bicycle carries a large selection of in-stock bikes, frames, & forks from the best brands in the industry.

Also I drove by Sun and Ski Sports yesterday on the other side of the Parks Mall (off Arbrook) and they had all bikes out in the parking lot for huge bike sale.

Here's what I ended up with. 2014 motobecane fantom 29er. Put it together tonight. Rode it in the dark through the yard and it felt great. We will see when I put it to the test.

The lighter, the better. And, the nicer the components the more you'll enjoy riding it.
I got into it back in the late 80's and the best stuff was hand built and crazy expensive. Now there are so many good bikes at decent prices it can be hard to decide. But if you stick w/ lightness and good components you won't go wrong. (Oh, and make sure you get the right frame size for your height).

Bikesdirect.com, I caught it on sale at $349. I see now it is $449. They have free shipping and there web sight says no tax for 48 states. I figured that included TX, but they have a location in Garland so it was plus tax.

I have a Trek 3700 Disc and a Gary Fisher 29'er for my bikes. I think if i get a new bike i will sell the Trek and pick up a Marin full suspension 29er with hydralic brakes.

The weight difference alone between my Trek and Gary Fisher is impressive. A pound or two makes a difference in how you can manuever the bike , lift it up over obstacles, and also manhandling it in and out of your car/truck.
