      What actually takes place is that the Master Distiller will actually taste from 1of the barrels and decide if it is ready. If the 1 is ready they assume the rest are ready without tasting them. The wharehouse where the mature Jack has probably about 17 levels that hold the barrels. The first 2 levels which stay the coolest since heat rises is where the Green Label comes from. Since this level does not get as hot the barrel does not expand and contract as much and therefore the liquor does not go into the pours and absorb the vanilla oak flavor from the barrel. Level 3 through through 15 are your standard black label and the upper levels are Single Barrel Jack. Gentleman Jack is black label Jack that is charcoal mellowed a second time before bottling

          I watched a show on the History channel a few weeks ago about the Jack Daniels distillery that said what they did is cycle the barrels from the top to the bottom as they age, they are not left on one floor for the entire aging process. Also, I believe it was said that the building was six floors high, but I'm not sure on that.

          One other thing they did was mix different barrels together to get the final taste, scent, color, etc before bottling.

                Jack Daniel's Green Label is a lighter, less mature whiskey with a lighter color and character. The barrels selected for Green Label tend to be on the lower floors and more toward the center of the warehouse where the whiskey matures more slowly.
