Not legally speaking. For him to be liable it requires negligence on the wetbacks part and some step in furtherance on his part. Farm labor is generally not covered under workers comp, so the only redress they potentially have is through suit.

I live in a Mexican area. Most are my friends but there are also a ton of illegals here that are just douche nozzels.
Had one that mowed my yard every other week. Sometimes with his two small sons. Truck was beat, they all looked like crap (ie clothes and very thin except for father) but they always did a nice job. Last year for x-mas I gave the father a $200 Walmart giftcard telling him it was for his family and got the two sons each an RC car with batteries. I go next door to my friends house and my truck alarms remote gives me a warning and I ignore it for a moment. Go outside and sure enough a big dent in the passenger door. I go look and can see the green smudge from fresh cut grass and the rock on the ground that was shot from the lawn mower. Lawn dude is gone with only half the lawn cut. He has never come back all this year.
Guess I should feel lucky he didn't try and sue me for it. My buddy (whos Mexican) looks at it and says "Fuckin wet backs" and I had to laugh. Jose across the street saw it and said that when the rock hit the truck they all instantly stopped what they were doing and loaded up their truck and took off like INS was on the way.
