    Definitely brine. You can still inject it after you brine, but it isn't really necessary.


    If you've never had a Greenberg smoked turkey, they're worth a shot once. I've always preferred ham over turkey for Thanksgiving though.

        I have never brined, but I cook on the Big Green Egg an it is always tender and juicy.

            My Dad has been buying these hams from some church for 20 years. They buy them as a smoked ham, and then smoke them two more times. They are ridiculously good. Not that honey glazed spiral cut nasty horseshit that most people like. I do like fried turkey, and smoked turkey is good. It's just not something I'm going to sit down and eat a couple plates of on Thanksgiving.

            Part of it too, is the leftovers. I can do a lot with both, but I like the ham leftovers more than the turkey leftovers.

              I may take you up on this, just trying to decide between this route or just frying two turkeys. I have a propane smoker that I'm still getting use to smoking briskets with but I don't think I need to smoke my first bird on Thanksgiving day when we have a mob of hungry folks.

              Frying is a walk in the park and I'm always complimented on how much better my turkey is over the oven baked one that the grandma makes. Figured this would be different...

              So, not to question your smoking abilities but I'm assuming you've smoked turkeys before in yall's new smoker? I'm sure you know this but changing smokers usually takes some time to figure out the firebox/heat transfer, etc.

              Other questions...

              How would you handle the pickup? Where, what time, how much sooner will the bird be done from the time I pick it up? Thanks.

                You are pretty close, so it would be fairly easy to facilitate transport or have you meet us, since we will likely be doing it at my shop in Venus. We are going to do a trial run this weekend, since we havent done one on the big smoker, but the last few years Ive smoked them on a small one, and its much easier to control the temp on the big one.

                  I smoke ours every year now. We do a pretty big gathering at our house (have for about the past 15-years) where we host both sides of the family as well as some friends...we used to do one oven baked and one fried, the fried ones always got fully eaten first and anything left was from the oven. I eventually started smoking the second one instead of the oven, and then it was getting eaten more-so than the fried....finally got to a point where the votes are all in-favor of the smoked over both the fried and/or the oven baked.

                  ...so the smoker has won everyone over for the past several years, and we don't even bother with the messy fryer anymore.

                    In my opinion smoking a turkey is a breeze compared to a brisket too. That's something to consider as well. You could fry one and smoke another.

                    The only thing I try to do is not get TOO big of a turkey. If I need a lot of turkey I prefer to get to 10lbs (or less) birds as opposed to 1 20lbs turkey. Seems to come out much better that way.

                      I love me some fried turkey but part of that was my dad cooking it. Smoked is definitely a good way to go. We are going to shoot for 12lb-15lb birds nothing bigger. Let us know if anyone wants one.

                          If we were doing thanksgiving this year if have you do a bird for me but I'm going to the game with my uncle so Stacy is going to her friends

                            I've never done bologna! I don't see why we couldn't but not while doing the birds. We will have the temp too hot.

                                thanks for the info guys...I'll let you know if I end up needing one. I found out the wife's grandma wants to bake her bird. She's old school and wants the broth for the stuffing. Plus, she just had knee replacement surgery and wants to up and about. I'm still trying to get her to just take a break this year so we'll see.
