This, we did a big boat trip at my wife's family reunion in Port Aransas and it wasn't really very fun.
My normal reply would be to charter a boat during the day, and hit the Houston strip clubs at night. Instead, you should look into the season limits for August since your son is going with you.
I cannot recommend Marty's Guide Service/Fish of a Lifetime highly enough. They're out of Port O'Connor, and they beyond rock. They put us on fish immediately, and we were catching fish all day. We limited out on 3 species of fish in a 4 hour trip, then we fished catch and release fish and gaff tops. Bay fishing is a blast, and can be a little more stimulating for 11 year olds.
I've taken this day trip many times and it's hands down the best for the price with the best fishing. King, Shark, Snapper and Mahi. They supply squid but go buy a couple lbs of cigar minnows and you're set.
