    I got 2 bags of the BGE brand of lump charcoal, some chunk mesquite wood, pizza stone, fire starter plugs, big pizza spatula grill grabber and a cleaning tool today at BBQ Masters or something like that in Southlake.

      No problem! Thanks for the grill! I think the uneven issue was clogged holes on the burner. I cleaned out several.

              All of the lump charcoal is pretty much the same. BGE lump charcoal is made by "Royal Oak", and you can get that at SAMs or Walmart, if you like that specific one. You can get the weber fire starters at Home Depot as well...I think they're $3 for 24 or so. You'll really like the flavor that you'll get from it as well as the ease of maintaining temps...it really makes long smokes very simple...(briskest, etc)

                      Well, tried to fire up the grill tonight and realized I fucked up one thing. I put the firebox in, but forgot to line up the hole with the side vent, DOH! Could not get it above 250, until I figured it out. Wasted about 40 minutes before I realized what I did... Added a little more coal too, don't think I had quite enough the first try. Got it to almost 500 before I set the vents good and held 460'ish perfect while I cooked a pizza on the pizza stone. Definitely tasted different than an oven! Probably need to add a tad bit less corn meal on the stone, and cook it maybe 30 more seconds to be a perfect crust. It was one of those Boboli crusts where you add your own toppings.
                      Burgers and corn on the cob tomorrow for lunch.

                        Once you get used to it, you'll love it. Won my at Texas Roadhouse last year and we use the crap out of it..

                              Fired up that weber today. Simple corn, potatoes, and steak. Seemed to cook good all the way across. Thanks again.

                              Also I can't say enough how awesome it was to cook on a grill that will hold a temp. I've never in my 29 years had one that would. Much more enjoyable to cook on.
