What fast-food restaurant did you like growing up that SUCKS now?

Again, this is why I prefer to eat at the smaller operations, places with actual Chefs, not just cooks that are warming up soup in a bag, etc.

The chicken breast of a chicken sandwich is what I was thinking.

To clear up any confusion, what I mean by that, is they buy precooked chicken breast. It's already been cooked to a safe internal temperature, is then frozen. Then in the store, they rethermalize it, so it's warm. This takes the major part of the food safety out of it, and keeps them from getting sued for serving a half raw chicken sandwich. It's brilliant from their standpoint. Limit liability, limit issues caused by human error, etc. Efficiency, consistency, everything goes way up. They are able to reduce kitchen square footage, because they don't need as much room for prep, they can do the entire menu around fewer pieces of equipment, etc. Kitchens are overhead to a restaurant. They want the smallest kitchen they can have, because the smaller the kitchen is, the larger they can make their dining room. More tables = more profit. Smaller kitchen = smaller overhead.


But, quality suffers. There is no substitute for fresh. There just isn't.

Same here, I never eat it anyways. SF had VERY few chain restaurants, I heard many say it was by design - that the city didn't want them.

We cook at home most meals. We finally found a pizza place we like here that we get once every 2 weeks but that's really about it.

Funny you say that. Many, many years ago I had gone to Fuddrucker's with friends. It was right when I had just gotten in to this side of the industry. I ordered quesadillas. They came out, and they had fucking corn in them. I like corn, but I don't want any goddamn corn on my quesadillas. So I asked them to make some without corn. They informed me that they couldn't. That is right around the time all this food prep stuff started to shift.
