Two things happen here.
1.) Your taste buds develop, and tastes change as you get older. Your palate becomes more developed. Things you used to like, you don't like anymore. Things you used to not like, you grow to like.
2.) Food quality has become shit. Preservation methods have changed. The makeup of what goes in to product has changed. Less beef, more soy. Less fresh, more processed crap. The chains do this for several reasons. Reduce food costs, increase consistency, reduce cook and service time, etc. McDonald's is the king of consistency. Sure, it's shit. But you can get that exact same shit, cooked the exact same way, with the exact same taste; whether you're in Odessa, TX, or Shanghai.
It's been this way for some time now, but many restaurants aren't really restaurants anymore. I like to call them microwaves, or re-thermers. So little product is actually cooked in the store anymore. This is true for fast food, but it's even more prevalent in casual restaurants, where you sit down to eat. Mainly with chains, but some Mom & Pops do it as well. I don't know if anyone else has noticed, but the meat in a jitb hamburger is putrid. I thought at first it was just the local jitb maybe doing something different, but it is every one of them.
