The answer depends on the maturity level of the child involved. The family and I took a cruise last May. My 18 year olds had their own room and did as they pleased. My 14 year old roomed with the wife and I. She was watched but not micro-managed.

I've been on 3 cruises.. A 3 night from Los Angeles (Baja CA route), a 4 night from Galveston (same route as the one that had the engine fire) and a 7 night out of Miami. The shorter ones were both Carnival on the smaller ships, the 7 night was on one of Royal Caribbean's big ships.
I enjoy cruises, and for ports and overall quality the Royal Caribbean out of Miami was the best. Only one of those was with Leah (Carnival out of Galveston), and she is not a big fan, which is why we haven't done more.
My brother and his wife / family have been on 10+, LA to Baja, LA to Hawaii, plenty in the Caribbean, Alaska, and one from NY down to Miami. They can be a lot of fun but it really depends on the persons taste. My brother has lotsa monay though, so they always get the big multi-room suites with butler service and shit.
My only real complaint about cruises are my bar / casino tabs.. I usually end up spending about as much on my ship account as on the cruise itself, and that is mainly because of booze. Days at sea, especially, since I end up drinking just about all day. Then again, that is one of my favorite parts..
As for bang for the buck and tropical destinations Leah has me sold on all-inclusive Mexico trips. I have only been on two, both in Playa Del Carmen, and I really enjoyed both. One was with the family, one with just the two of us, but both were fun. They are really very similar to cruises except you don't get to visit different ports.
There is a lot more to do on cruises than many people think, and you can hit all the activities, some, or none depending on what you want. You can stay busy all day, or you can just lounge by the pool every day. Particularly on the larger ships where there are multiple bars, clubs, casinos, ice rinks, surfing, basketball, putt-putt, etc..
For any cruises or all-inclusives, I would recommend you read the reviews on Trip Adviser. In addition to the pros and cons, they also give good tips and tricks to make your trip more enjoyable. They are user reviews, not professional reviewers, so always give consideration to that with the negatives. The best part of those though, is that you can find very recent reviews, so it is good up to date info.

Been on 7 cruises with the wife, the longest being a two 7 day cruise back to back eastern/western caribbean and then the transatlantic we did from Miami to Barcelona for 13 days. Cruise ships are like neighborhoods. Carnival is the ghetto. Princess is for old New Yorkers (but we enjoy them just the same....and old jew New Yorkers are fun to meet and talk to). Norweigan is a great middle of the road cruise ship....we did see fewer black families on Norweigan and even fewer on Princess.
We have yet to take a cruise with a munchkin but we are planning on in October this year......she will be 11months old by then.
