most places have the server pay both the bar tender and the bus boys a % of their sales. if you run up a $50 tab and lets say they pay 1% to the bar and 1% to the bus, then the waiter owes $1 on your tab. if you stiff them because the food didn't come out on time or wasn't cooked perfect or something else out of their control then you are effectively having them pay for part of your meal.
i don't typically look at my buddies tabs when we go out to eat, but i guess i just roll with good company, i've never seen any of my friends leave less then 15% and most leave ~20%, i agree with whomever said it is a true showing of class.
most waiter make ~2.50-3.00 and hour i believe, this is not a survivable wage, the expectation is obviously that when you go out to eat you fucking tip, if they were all making ~$10-12 an hour then your $15 steak would cost more obviously. if you don't have the money to tip eat at a fast food joint, and if you do have it but don't think 15-20% is fair then you need to wait tables at some point in your life.
