What about a cruise? Galveston isn't far away and it's a dirt cheap way to get out of the country. With a group of 20+ you can book private parties with an open bar for about $12 an hour per person on Carnival. With a big enough group you can negotiate open bar tabs for the entire cruise as well but I've never done it.
The new big ship starts celling (Carnival Magic) out of their in November. I'm planning on the Dec 4th sailing.

Were supposed to go to Eastern Carib but the hairucain blew that, so they re-routed to Western Carib, which is how we ended up in Belize. Not a bad gig (for Mexico) but Mary said that the Eastern "St Marrten, Thomas etc..) were better. Most of the port-of-calls we stopped at were WAY too commercialized. I was hoping to see some one legged Mexican boy carving dolphins out of iron wood but only found Wal-Martesque shops with prices that were twice as high as state side Wally's.
We hit Cozumel (decent with excellent dolphin swimming, average food, shopping was too commercialized),
Costa Maya (not much to talk about, shopping was "OK" I guess)
Belize (my favorite. Belize City was pretty hopping with plenty of bars and shopping, and the one place you can get "real" Cuban cigars. Food was pretty good and the local beer - Belikin - was awesome. Diving/Snorkeling on the second largest coral reef in the world there too.)
Isle of Roatan (Mahogany Bay beach was very nice but small. Shopping was decent but the rest of the island is very primitive, so don't wander off.
