The Caddo lake expeditions are pretty cool scenery.

We do not have a shuttle service, but we do have a trailer that will haul up to 6 canoes, gear, and whatnot that rents for $50/day.
We have no restrictions on where you can take the canoes. Most folks go to one of the 26 lakes within two hours, Sabine River, or head over to Arkansas/Louisiana rivers and lakes.
I will say, though, that if you plan on going to the bigger rivers in Arkansas/Louisiana then you may want to look into the outfitters in those areas that rent canoes and also provide shuttle services.
As mentioned before, the Caddo Lake and Caddo river tours are pretty nice and there are a ton of bed and breakfast spots in the country that would absolutely appeal to nearly any chick.
If y'all are truly interested in this activity, then you may want to find a copy of "Rivers and Rapids". It's an excellent book with loads of info on rivers in our area along with outfitters. We happen to be all out of them at the moment.
