Im 100% about the 67-72 C10. As Rreemo said, CHEAP CHEAP CHEAP. There is so many easy things to do to it with kits for everything. You can easily swap in a 5.3/LSX, 6spd or auto. A/C is simple to add. Very easy to take apart and put together. Beautiful trucks. Lots of customization (suspension, interior, exterior, etc) without a lot of money. So much potential for so little money.
My BIGGEST suggestion is simply find the vehicle of your choice with the LEAST amount of rust. Dear god, rust is the biggest problem you will ever run into. A nice straight body will save you and make the complete difference in a build. Bodywork and paint is VERY expensive part of the build.

Something with air conditioning. And don't limit yourself to domestics. Your son might like old imports like Toyota ae86's and celicas, Mitsubishi starions and galant vr4's, Mazda rx-7's and miatas, Nissan 280z's.
What ever it is just make sure there are still parts being made for them. Sucks for a kid having a project where it can never be completed because there aren't any parts available.
