I saw you are taking route #3 above....just FYI, I have some good friends that own a place in SeaGrove (half way between Destin and Panama City), they drive back and forth from their home in Southlake literally about 5-6 times per year (for the past ~8 years now), and they always take that route. When we go visit them out there we take that route as well.
Edit - a little tip/difference in your route....we always take 190 to avoid inner-city Lafayette and also inner city Baton Rouge...coming from the east take a look at your map, you will catch 190 before you get into Baton Rouge, and it will take you up a little north and then straight across west all the way to Opelousas....it will save you a considerable amont of time.

Done that drive to many times route #1 has to many towns to slow you down. Route 2 isn't bad unless you are pulling a large trailer. I been using #3 the last few years it's a easy drive but baton rouge at 5pm does suck but not as bad as Dallas 5pm traffic.
