<--- Need to buy a microwave and trying to see if I should buy a convection countertop oven or a combo microwave/convection oven, or just fuck it buy a microwave and use the oven under the stove like mom always used !

    Help a brutha out

Micro - cooks with microwave energy only (no heating element) and cooks from the inside out. Tends to dry food out.

convection micro -Can work as a regular microwave or in convection mode. Convection mode means that the it will be cooking with low and sometimes varying percentage levels of microwave energy (cooking from the inside out). As well as using a (small) heating element to generate heat that cooks from the outside in. Convection microwave cooking will not dry out foods as much as a standard microwave, but will dry food out more than a standard oven or convection oven. I would say that they were not designed to completely replace the self cleaning oven in a home. Convection microwaves were made popular in RV use where space is limited, therefore a full size household oven is not a good option. Convection microwave are good to use for small meals or small "batches" of cooking. Also some people that have convection microwaves use them in the summer months, as they do not heat up a kitchen as much as a household oven.

Oven - (household 220v) uses a heating source such as an element or burner to heat based on temp selected via thermostat. Most new ovens will have a feature that will use the broiling element even in a baking cycle to help maintain a more even temp inside the oven from top to bottom. Older ovens and basic ovens only used one element during a cooking cycle.

Convection oven - (household 220v) can be used as a regular oven or in convection mode. Convection mode will use all heating elements and a fan to circulate the heat/air inside the oven for the most precise oven temp management system out today. Also by using convection, food will normally cook about 20% faster even at a lower temp. If you get a convection oven. Make sure it has the "auto program" convection conversion option. Otherwise if you normally would bake for 2 hours at 350 degrees. You set it cook in convection for 2 hours at 350 degrees....you will burn the food to a crisp!!

      Completely and totally false.

      Only when overcooked.

Where do you people get this stuff?

Ever put some leftovers in the fridge and thought that they were hot, only to find out that the middle was still cold? Obviously not cooking from the inside-out.
How do we forget ourselves? How do we forget our minds?

It is a common misconception, I'll say that much. I've heard this "cooks from the inside out" all my life. I have heard competitors spout off the same shit, and I will always call them out on it once I'm done laughing. They don't like me very much, but what better way to prove to a customer that someone is clearly full of shit and in over their head?

Did a little google search to see where the "inside out" theory came from. Appears to be mainly based on the food type in how it cooks.

While microwave radiation does penetrate the surface of food and start to heat the inside at roughly the same time as the surface, it's not necessarily accurate to say the food is cooked from the inside out. Microwaves heat food by being absorbed primarily by liquid water molecules, and to a lesser extent fats and some sugars, imparting energy to them in the form of heat. (Contrary to what many think, the frequency at which microwave ovens operate, 2.45 GHz, is not tuned to the maximum absorption frequency of water. That frequency is actually closer to 10 GHz, and if ovens operated there, food would be heated even less inside, since the bulk of the radiation would be absorbed at or near the surface due to the short wavelength.) If a food is of uniform consistency and high in water content, most of the microwave energy will be absorbed by the water near the surface before it gets into the center of the food, and the food will heat from the outside in, as with traditional ovens. On the other hand, if the surface of the food is drier than the center, as with bread or a baked potato, the center will heat up faster. You can see this clearly if you microwave foods with a dry outer crust and a moist filling, like a McDonald's apple pie. If you cook it for about 20 seconds in a typical oven, you'll find that the crust is fairly cool to warm, while the filling can be quite hot.

With that....I guess where the factory reps might have come up with the "inside out" theory. They used to demonstrate microwaves to customers using potatoes. It was quick, easy and not much of a mess. Back when I was shown this demo. The rep would take 3 potatoes and start them in a microwave. After a couple of mintues they would pull one out and cut it open....start the others back up and a few minutes later pull another one out and cut it open.... start the last one and a few mintutes later you had one finished potato. That was back when people actually cooked a meal at home about every night. Not so much anymore. People buying microwaves now just walk in and ask for the cheapest micro they can get. Not much of a demo needed now days.

Counter top unit-I have no idea. I had a full size oven with a convection feature, and it was worth every penny.

                      Depends on your cooking habits.

I have two. A counter top microwave/convection and a full oven. They kick ass, pure and simple.

It's the one thing I should have fought for in the divorce. I'm ruined for a conventional oven after using a convection oven for so many years.
