    I have a Weber Performer and it is probably the best charcoal grill you can buy out there. Mine has a gas starter but they have one without the starter for under $300. A charcoal chimney starter works incredibly well and you don't have to ever use starter fluid. Just roll up wads of newspaper under the chimney and light it up.

    BTW, I have no preference over Gas or Charcoal. I like both but I always use my Weber for real BBQ.

          I don't believe the hype of the 1500 degree searing. I have been to those high end steak houses (Del Frico's,Bob's ect) and have yet had something better than a good cut of meat and a charcoal/wood backyard grill .

            the hotter the grill the better. pisses me off to no end when I use a gas grill and cant get a good sear. But, charcoal and colse to the flame will yield good results.

              Lmfao. Ok buddy. Every major steakhouse in the country must be doing it wrong then. You should go teach them that they are doing it wrong and how to do it properly. You'd make a killing.

              And you're full of shit, too. I buy raw prime tenderloins directly from Bob's and still can't reproduce their steaks at home, because I don't have enough btu's or can't get the fire hot enough to do it. I work with world renowned chefs all day every day, and have tried every method known to man to cook a steak, and there is simply no replacement for a fire that hot. Period. End of story.

                Ok , your right I don't want to reproduce their streaks @ home ,only better . Get a piece of meat from Standard meats or Burgundy Pasture put it on a dull cherry red fire about 1000 degree F and season it right and walla. I'm not saying I'll cook for hundreds of people ,but you can put high end steak houses to same with a backyard grill .You don't need 1500 degrees to make a good steak ,period end of story ...

                  How many steak houses have you worked at? Plus, if you could, post a pic of your home grill running at 1000 degrees at the grill surface for us to see, because I REALLY have to see this....

                            Obviously, he is using acetylene in stead of propane to achieve his 1k degree F cooking. Sorry to give away your secrets.

                            I stay with propane and get by with 2-350 degrees f.

                                If your a self taught novice and haven't mastered the steak maybe you ought to look @ baking . I didn't say I was going head to head with a master chef . Just when you go to place that is cooking a steak a minute you loose quality control . I also fail to see have using salt and pepper to season disqualifies me Mr Ramsay .I also didn't refer to the use of gas only charcoal and wood to obtain those temps .
