    Yeah I was going to say that 8mpg folks have a bakery of some sort. Good luck getting in touch with him though. Last time I heard from him he was doing 5, 12 hour shifts per week with school on the side.

          What type of equipment? are you making dough from scratch? I've got some experience from a donut stand point. Though it was all at wal mart and they were using frozen pre-made donuts that we would proof and then fry. Not sure how much I would be of help but I will try

            Where is this shop located? if its in Tarrant county or somewhere not too far out then
            I know someone that will come to your place and show you the in's and out's of making good donuts and sausage rolls but I know before I even ask him its going to cost a good amount for his service...He is good though

                Full set up with a 60q mixer, proofer, fryer and a glazer with all the other misc equipment that I have no idea how to work. lol

                I'm interested in the pre-made concept because 4AM is so not appealing. I'm also running a resturant so this is going to take some planning.


                I'm in Breckenridge, TX too a GTG would rock! Dinner at Jeffro's Steakhouse and dessert at Sweet Accessories.

                  Even with the pre-made stuff, it takes several hours, you have to lay out the donuts, let them thaw, then put them in the proofer. We would lay them out before we would go home for the day and then put them in the freezer. They would get pulled out in the evening IIRC, around 8, to thaw, then the donut fryer would come in around 5 if memory serves me correctly, put them in the proofer and start the process

                    This link explains the different oils and the specifics of what oils you do/don't wanna use and why.


                    This is a link to a guy that did trial and error to make his own recipe. They look pretty tasty.


                    Just a few things to mill over while you're waiting on a PRO with better advice. Sorry I couldn't help more.

                        No, but I know of this website called Google. Also, you don't have to be a cop to enjoy fried stuff. Donuts, funnel cakes, those Chinese donuts rolled in really fine sugar, hush puppies. I'll stop now.
