Need to get them and the kart on a BIG lot if possible, then, try putting small extensions on the pedals and paint the gas green and the brake red. We did this to my cousin's kids kart years ago for the same reason. Kid would panic but finally got the message.
Natural law. Sons are put on this earth to trouble their fathers.

Youall should see the first time kid karts on the track. Most of the time they don't remember about the brake.

        Big field = good.
Or some time on the track with out anyone else on it.
Then again some kids get it quicker than others. Some never get it.

Most of the time they are a whoot to watch race.

Every toy like that in my family has a clutch. You would think it only complicates things, but it makes them pay a little more attention, and it gets them in the habit of using something else as much as they want to use the gas. I ALWAYS tell them, every single time they ride, with lots of finger pointing and eye contact "when in doubt, squeeze the clutch". It seems to sink in, and it's kept the ER visits to a minimum.

Also, tell them they should never lose they're fear of it, as my pops did on day one. It's good to be scared shitless every time you jump on, it keeps you safe.

I don't know how many people I've asked if they were scared even after riding for years, and they would confidently say "hell no!". Those are the ones who get hurt, blinded by confidence and their illusion of complete control.

Watch out for trip wires and punji sticks.

Also, your kids may be VC - it would account for the lack of driving skills.

My dad built me a minibike with a 5hp motor for my 5th or 6th bday LOL. got a honda 3 wheeler and a racing style go kart when i was 7 or 8, and a honda odyssey when i was 10 or 11. Had a suzuki quadzilla when i was 14. needless to day looking back, i don't think my dad was particularly concerned with my safety LOL!
