There are walk in coolers too, y'know. But the meats are most likely frozen to help with the health dept and food safety issues that arise from fresh meats. 99% sure that everything that isn't a meat is refrigerated and pre-sliced. Good quality mom and pop shops will have super fresh produce from a local market, but you're going to pay for that usually.

Everything there is frozen. I worked there. The only things that aren't are the onions, peppers, and tomatoes. However, if there are any that have already been sliced but not used, they go in the freezer over night. I also like how they say that their dough is never frozen yet the first placed that it goes when delivered is in the freezer.
