Like the title says I'm looking for a good recipe to try and make my first batch of home made hot sauce to go with some fajita's I'm going to cook up this weekend. I like it a little on the spicy side with a good amount of cilantro if that helps any.

Here's my recipe I make all the time:
1 fresh tomato
1 can of peeled whole tomatoes
fresh cilantro, chopped
3 cloves of fresh garlic or 3 tblsp garlic powder or jarred minced garlic
3-6 fresh jalapenos (adjust for your taste preference)
3 tablespoons of lime juice
1/2 of a medium sized peeled onion
1 tsp salt
Put everything in a blender and hit the pulse button a few times until it looks like salsa and you're done.
You can adjust all ingredients to your taste. You can also use all canned tomatoes or all fresh tomatoes. I like fresh tomatoes. I've added pineapple and it was pretty good. I've also used green tomatoes (boiled) and avocado instead of red tomatoes for a green salsa and that's pretty good also.

I bottle and sell my homemade salsa, and even mexicans tell me its some good shit! I won't give out my recipe, but just know the basics are tomatoes, onion, cilantro, garlic, peppers, salt and pepper. Just play around with different mixtures until it tastes right to you. I will say that roma tomatoes seem to taste the best to me. You can also add other things to your liking, including tomatillos. Serranos > Jalapenos to me, but I like the flavor and heat of them. Also, I use all fresh ingredients, no cans of anything go into my salsa.

Our family recipe is basically this:
5-6 Roma tomatos
1 can diced tomatos with green chilis
1/2 white onion
4 jalapenos
1 tsp garlic salt
1/2 tsp pepper
4 pinches of cumin
EDIT: I forgot the cilantro.
All seasonings are to taste. Start out with 1/2 tsp of garlic salt and work up from there.Last edited by 03trubluGT; 12-01-2010, 11:49 PM.

Big can of whole tomatoes (fresh if I can find good ripe ones)
1 onion
4 jalapenos
1 chipotle
1 dried guajillo chile
1 dried ancho chile
3 cloves garlic
a bit of salt
a bit of black pepper
eyeball a tsp. of cumin
couple of pinches of sugar
Simmer on stove for 30 minutes or so. Let it cool down before you put it in a blender, unless you want an explosion. Add however much cilantro you want as well as the juice of a lime and pulse a few times in the blender, or until you reach whatever consistency you want.
The guajillo chiles have thicker skin than most, so it might be helpful to pull that out first and puree it, then add the rest of the salsa.How do we forget ourselves? How do we forget our minds?
