Uses infrared to cook, so IMO, tastes like toasted bread. It's like the George Foreman of grills.

Is it in ice? Or just in the chest?

No ice. Also threw the ham in there.

Should be fine. You can give it a cold water bath if you need to.

Can I defrost two birds that were frozen this weekend that I put in the fridge last night..if I put them in a cooler with water this afternoon? They are 18 and 13.5 lb birds.

It should work. Just do like Boosted said and weigh them down with something heavy. I would also change out the water periodically to ensure a quicker thaw....It's what I end up doing every year...and I take the bird out on Saturday....

Is it better to put a rub and season inject the bird the night before or on the day of cooking?

Being the resident coon-ass, this is close to what we do at home. I might add some liquid crab boil to this recipe to give it a bit more "KICK".

I do liquid onions, garlic wine, butter with the crab-boil. Never inject or puncture the skin with the needle.Do as Dave says, under the skin next to the bone. Why, because when frying the skin shrinks up and will squeeze out most of the liquid you injected in the nearby hole!

Dont forget the deep fried Boudin balls and hog head cheese!!! AAeeee!

I guess you just buy "Dales" off of the shelf. With the needle attached?

Well my bright ass idea of loading the two smaller birds-18 and 13.5lbs in to a Omaha steaks big Styrofoam cooler and submerging them in water over night backfired!!! F#cking water leaked out somehow, and about 6-8 qts of water was all over the kitchen counter and floor
