  • Cajun Fried turkey Recipes?

    What/how is everyone going to prepare theirs this year? Injection recipes? Spice/seasoning rub? Any suggestions tips going into turkey day thursday....2nd year to do my own; and I must say last years was pretty badass!!!

    Tony's in melted butter in a needle works great for me. bcoop is the man when it comes to this issue, though.

        i jsut bought the tonys jalapeno and butter kits yesterday. i will puree a couple of peppers and mix in a bottle of tabasco for one of the turkeys i am doing. looks like we are gonna be freezing out there doing the frying.

            With the Cajun butter and the OJ, it's going to look burnt. The sugars caramelize and give it a burnt appearance. It will taste great though, if you can get past the visual aspect of it. We discouarage it up here, because of the appearance, and it kills the oil. We fry too many birds in a short amount of time, to be changing the oil after every bird or to have to have any re-dos, so we try to avoid it all together. I've done one just about any way you can imagine though.




            Believe it or not, you'll have a damn fine bird using nothing more than Tony's to rub it down with.

              This is what we do.

              The only question I have is, how long before you cook it do you inject? I think last year I did it right before we put it in the oven.

                The longer the better. The trick with poultry, is that it doesn't absorb a marinade as effectively as beef does, because it's not pourous like beef is. Poultry likes to pull moisture from the bone. So you could do this a couple ways. One, would be to drill tiny holes in the bones, and inject in those holes. The other, would be to inject next to the bones. Run the needle along a leg, inject, while pulling out slowly. Then hit the next, do the same. Make sure and inject several times around the breastplate, etc.

                    Make sure the turkey is COMPLETELY thawed. You're going to have quite a predicament on your hands if it's not thawed when you drop it in the fryer.

                          I've been using Emerils recipe for turkey injecition, though I reccomend straining the marinade or you will be stoppinig to clean the needle after the rosemary stops it up.

                            I was watching Good Eats on the food network channel a few months back. The guy was talking about the best way to fry a turkey.

                            I shit you not, he was using a ladder and a pulley system.

                              We fry turkeys for Thanksgiving and Christmas every year. I use melted butter, Tony's, cayenne pepper...inject near the bones like Brent said. Cook it at 375deg for 3.5mins per pound. The second and third bird fried always tastes better than the first.
