Eagle Mountain Park in Saginaw/FW is nice but no dogs are allowed.

Dinosaur Valley State Park

The best hiking around here is the Dallas Nature Center or whatever they call it now. I love that place and it has plenty of elevation changes on the harder trails. Off is a must during the summer as the chiggers can be a real pain.
