If it is posted with a 51% sign you cannot carry, I know this for a fact.
The rest of this is either my opinion or I am not 100% sure:
I believe if you are in a bar that isn't posted you are ok. I believe the requirement was recently changed to say it has to be posted, even if the CHL'er would assume they meet the 51% requirement.
I wouldn't mess around with getting permission, seems like things get grey there. Written permission would be better than verbal. You may get verbal permission but what if you use it on duty? I believe that you are within your legal right to carry a firearm on your person if you are the operator of a bar without a CHL. by operator, that would mean manager or whoever was in charge during the hours in question. However, I think I remember finding out that the right to carry on the premise is lost with the issuance of a CHL. I could be wrong. But I'm fairly certain I'm correct on the first par, not sure about the CHL part though.
