You can have it processed the same as a deer. I shoot several a year more so because of the damage they cause to farm land than anything. On occasion I will take backstrap provided it isn't a huge bore or that aren't in poor shape. I shot one tonight after target shooting and just left her but the land owner felt the same way about both of the pigs we shot."It's another burrito, it's a cold Lone Star in my hand!"

Hams and shoulders shouldn't be wasted - only reason you have to gut a pig is if you want the ribs and/or tenders. Neither are usually worth the effort on a wild pig.
Just skin it, cut the shoulders off, cut the backstrap out, and then cut the hams off. Leave the rest for the 'yotes.
