I guess I priced this 1911 a bit too low. I've had two people call within 10 minutes of posting.

I know I could just get the cash and roll out, but is there any way to protect myself any? Like with a bill of sale?

By law you really aren't required to do or document anything when you sell a gun in TX. As long as you don't have knowledge that the person you are selling it to is not legally able to own a gun, you're good.
If you want a record of it in case the gun comes up in a crime investigation, then you could do a bill of sale.

At the very least a bill of sale with the serial number on it with the buyer's signature.

I would have them bring a copy of the DL on a regular sheet of paper that I then write the serial number of the gun and date time of sale, they sign or scribble name and hand over the cash.

If they don't like it, I don't have to sell it.
