Educate me on jail breaking an iPhone

I think I understand the basics but I'm still not sure. Help me out with a few points.

When you jailbreak an iPhone, do you lose the functionality and apps you had before the jailbreak? Is it like a complete operating system change like going from Windows to Linux? Or does it just hit a few pieces and the iPhone still looks and feels the same but with additional capabilities?

Whats the scoop on jailbreak for iOS 5.1? Based on previous jailbreaks, when should I expect a jailbreak for 5.1?

What's the thing about the firmware? My phone shows 4.12.01.

The phone still looks and feels the same. You can download apps not approved by the app store, change the look if you want, etc.

Unless you want apps outside approved apps, there really isnt a reason to jailbreak it

You can get all the apps in the store for free.

Don't forget to ssh into your phone and change the stock password.

In this case, the motivation is to unlock it so it can be used overseas with other carriers.
