I say keep the Grabber, but if you must change, Bright Atlantic Blue is a sweet color.

I like it the way it is, but if it were possible, some kind of a pearlescent blue might look good. That'd be a pretty bold experiment, though.

I say keep it GB and swap the wheels for some silver ones. I think they'd go mighty fine with those stripes; just my 2 cents

Again I say keep it how it is. But, another color combo that I loved back in the day on a classic was that guy that had the charcoal with the black racing stripes. I'm pretty sure it was a blown 351 as well. Bad ass car, I remember lusting after it when I was in high school. I think that you said that you knew the guy as well.
