I can see bending it like in the first video at 90 degrees but I don't see the point in bending it in a complete circle. I can't think of any situations where you would need to bend a knife to that extreme.

You don't need to. He is showing his craftsmanship. You're looking too far in to this.

those would be great hunting/skinning knives.

Too much point on most of them, too big a blade for skinning and caping, and not enough belly for skinning & caping. Great cooking knives, though.

He does have various knives, you know. Filet, boning, etc. They aren't all 10" chef's knives.
