They don't use Iron as fuel. Iron, and anything heavier than iron, consume energy when fused. When a star makes iron it is dead on its feet.

It depends on how big the star is. You are correct that they are dead on their feet but nothing last forever even when their lifespan is billions of years. They will burn and produce iron along with all of the other elements before they turn into a dwarf, neutron star or a black hole. They make even more heavy elements when they blow up.
