Any modern day bike will have enough power to keep you entertained, honestly, so I would just go to a bunch of dealerships and sit on literally dozens of bikes. You'll end up finding one that speaks to you, and that's the one you should buy.

I've owned probably 12 different sportbike models and CC sizes over the past 15 years and my vote goes to the zx10r or gsxr 1k. I started on 600s then went to 750s then to the 1000s and stuck with those. Kawi and Suzuki's get my vote for comfort and seat/handle positioning. Best thing to do is go sit on a few.
I had a 2007 GSXR750 and it was a nice running bike. The only issues I could tell you to look out for is the electrical system. The stators seem to like to take a crap on you, but they are easy to replace and not too expensive.
You can test the electrical system before purchasing. Just take a voltmeter and remove the seat. With the bike running you should be around 13 or 13.5 volts I believe. While giving it a bit of throttle it should spike up. If it doesn't, there is a problem.
My friend has a 09 GSXR750 with full exhaust, sprockets, K&N, power commander, and it's pretty damn quick!

Didn't say I was willing to shell out that much (yet). It was just the first bike I looked at at the Honda dealership up the road. It's a small joint, and it was the only sport bike they had in the showroom. He said he'd sell it to me for $11,699 plus tax, title, and license.
