I put them just above the edge of the counter to give maximum light on the counter tops for work light. You can always buy brighter LED bulbs if its too dim. If its too bright, put in a dimmer switch.
4' separation was what I was seeing when looking around the interwebz.

So we are now hung on flooring. Our cabinets are getting measured tomorrow after work. So we need to make a decision on what to do with the floors.
We have found a wood tile at Lowe's that she loves, but I have read they have some inconsistency in color and sheen from lot to lot, so the option to tile the kitchen/nook now and do the rest later isn't a good one. I am also a bit concerned because it seems like a pretty slick tile and spills could get pretty dangerous.

The next option is to extend our laminate into the dining room and select a nice tile for the kitchen and utility area. This option has some catches. It leaves us with a transition strip across the width of the kitchen and if the cabinets aren't on the same plane from side to side, we will have a diagonal line across the kitchen with the transition strip.

The third option is to tile the kitchen and the nook the same.

Of course we can always just make repairs and leave the same tile down until a later date, but we are afraid with the baby on the way, it is now or never.

Our color scheme is going to be white cabinets, counter tops are kind of a cream color, back splash will be white beveled subway tiles, and the walls will be a medium gray color. The wall color will be primarily seen in the dining room. We REALLY like the look of dark hardwoods with the white cabinets and splash.

I am leaning more towards a nice tile through the utility/kitchen/nook and doing the wood floors elsewhere at a later date. We can tie the tile in to the rest of the house by tiling the entry with the same tile. I need to surf through houzz for some ideas and color options for flooring.

Will we run into an issue putting the sink drain/disposal on the opposite side of the sink from the dishwasher?

To cure our issue with the fridge door not opening, we are planning to install a narrow cabinet to the left of the fridge, which will force us to move our dishwasher to the left of the sink. The sink we are looking to buy has the drain on the right...

No...the drain hose for the dishwasher should reach. If not, turn your disposal a bit.

          Thats what I figured.

Disposal. Looking at insinkerator evolution compact 3/4 horse.

I like the quiet nature of them. We have a dog that has trouble with noises and about to have a newborn.

Cabinet measure was done tonight. I will get a multi tier bid. The kitchen, the window seat, utility cabinets, and a vanity cabinet. I am hoping that once they are done fine tuning the bid, it will be within our budget.

Cabinets will be raised panel, pre-finished in white and they will install them.

Once I have my drawings, and I approve them, I will take them to my granite guy, along with my slabs to be fabbed for installation.

Sink will be a blanco composite granite single basin in anthracite with an insinkerator 3/4 hp disposal.

The only thing left for us to decide on is the tile. I am going to try and start on demo this weekend. Pulling the soffits down, scraping the popcorn ceiling, setting can lighs, framing the wall for the cabinet extension, and starting the tape and bed process.

My slabs are all take outs. They are counter depth units already. All I need are a few adjustments and sink holes

I spent all day Saturday scraping popcorn and painting the ceiling underneath. I picked up some can lights today, hopefully I can get those put in next weekend.

Hopefully my cabinet drawings come back this week so that i can verify measurements and layout. I should get a solid ETA for installation once the drawings are approved. That will set the timeline for the rest of the demo and associated repairs.
